Its harvesting season here in the mitten, and time to use some of those fresh picked veggies. If you’re anything like us, we have cook-out after cook-out during Labor Day weekend; which makes it the perfect time to whip up something fresh and yummy to share with family and friends.
Cucumbers and tomatoes are some of the most popular veggies grown around here, and boy are they delicious. Here is a quick ‘n easy recipe that can be whipped together and brought to the next cook-out.

- 2 Cucumbers (or zucchini)
- 1 pint Grape tomatoes cut in half
- 2-3 mozzarella string cheeses, cut
- 1/4 cup Italian dressing (I used this kind, but you can use your favorite)
- 3-4 fresh basil leaves, chopped
Combine all ingredients in a bowl. I use a bowl with a lid, then I can just shake it to mix it all together. Refrigerate until ready to use!
Super simple, super yummy, and super healthy too!
